The Effect of Vineyard Green Cover on Wine Quality in Grape Cultivar Cabernet Sauvignon

Abstract: The effects of vineyard green cover with white clover (Trifolium repens),perennial ryegrass (Lolium perenne) and alfalfa (Medicago sativa) on wine quality of 'Cabernet Sauvignon' were studied. The variation of grape berry reducing sugar content and total acid content was determined during maturing. Wine components were determined by comparing to clean tillage. The sensory quality of the wines was evaluated after winemaking. The results showed that reducing sugar content of berry increased, total acid content of grape berry decreased, while the pH, anthocyan, tannin of wine increased. Compared with those of clean tillage, significant difference in wine color and configuration occurred. It can be concluded that green cover improved the quality of grape berry and wine evidently.
