Comprehensive Evaluation of Jujube Fruit Quality Based on Sensory, Texture, and Physicochemical Analysis

摘要:

【目的】通过对枣果感官、质构、理化性状的分析,建立标准、客观的枣果质地品质评价方法,为枣种质果实品质评价和育种提供理论依据。【方法】以123份不同用途枣种质为供试材料,通过对感官指标、质构指标、理化指标进行相关性、主成分、差异显著性分析及逐步线性回归等分析,筛选影响果实品质的关键指标,建立数字化枣果品质综合评价模型。【结果】描述统计分析结果表明,不同种质枣果感官、质构、理化指标等均存在较大差异,感官指标的变异系数范围在22.13%—47.80%,质构指标的变异系数范围在13.94%—30.84%,理化指标的变异系数范围在3.95%—46.68%,其中果肉含水量变异系数最小为3.95%。相关性分析结果表明,果实综合口感与各细胞壁组分间有较高相关性。主成分分析结果表明,从14个质构和生理指标中筛选出细胞壁组分、总酚和黄酮类、总糖、含水量、可溶性蛋白等5个影响果实品质的关键成分,其贡献率分别为28.97%、13.07%、10.72%、8.75%和7.52%,累计贡献率为69.03%。综合评价结果表明,参试种质果实的综合得分H值在-1.48—1.52,按H值高到低排序,前5%的种质H值在1.18—1.52,后5%的种质H值在-1.48—-0.97,综合得分H较高的种质感官品质表现为致密、汁少、皮厚,综合H值较低的种质感官品质表现为酥脆、汁多、皮薄。通过对感官评价总分与综合得分H值进行相关性分析,结果表明二者具有显著相关性;差异显著性分析结果表明鲜食种质表现为酥脆、皮薄、汁多,制干种质表现为致密、皮厚、汁少,干鲜兼用品种为较致密、皮中厚、汁多。最后,通过逐步线性回归分析建立了Y = 7.16×10-16+0.26共价果胶+0.285半纤维素+0.207水溶果胶+0.183离子果胶+0.229纤维素+0.132总酚+0.108淀粉+0.083可溶性蛋白(Y为综合得分)的感官评价预测模型,R2达0.98精度高。【结论】以质地指标、理化指标含量建立感官评价模型可以较好地对枣果质地品质进行评价,以弥补感官分析中主观性较强所导致的评价偏差。

Abstract:

【Objective】This study aimed to establish a standardized and objective evaluation method for the textural quality of jujube fruits through comprehensive analysis of sensory, textural, and physicochemical traits, so as to provide a solid theoretical basis for fruit quality evaluation and selective breeding of jujube germplasm resources.【Method】A total of 123 jujube germplasms with different utilization types were employed as experimental materials. Correlation analysis, principal component analysis (PCA), significance difference analysis and stepwise linear regression were performed on sensory, textural and physicochemical indices of jujube fruits. The core indicators affecting fruit quality were screened, and a digital comprehensive evaluation model for jujube fruit quality was subsequently constructed.【Result】Descriptive statistical analysis revealed extensive phenotypic variations in sensory, textural and physicochemical traits among different jujube germplasms. The coefficient of variation (CV) of sensory indices ranged from 22.13% to 47.80%, that of textural indices from 13.94% to 30.84%, and that of physicochemical indices from 3.95% to 46.68%; pulp moisture content possessed the minimum CV of 3.95%. Correlation analysis demonstrated that the comprehensive taste quality of jujube fruits was strongly correlated with cell wall component contents. PCA identified five core factors affecting fruit quality from 14 textural and physiological indices, including cell wall components, total phenols and flavonoids, total soluble sugars, pulp moisture content, and soluble protein. The respective contribution rates of the first four principal factors were 28.97%, 13.07%, 10.72%, 8.75%, 7.52%, respectively, with a cumulative contribution rate of 69.03% to the total phenotypic variation. The comprehensive score H of tested germplasms varied from -1.48 to 1.52. The top 5% of germplasms ranked by H value had scores varying from 1.18 to 1.52, while the bottom 5% germplasms ranged from -1.48 to -0.97. Germplasms with high H values exhibited dense fruit texture, low juice yield and thick peel in sensory performance; those with low H values showed crisp texture, high juice yield and thin peel. A significant correlation was detected between total sensory scores and comprehensive H values. Significance difference analysis indicated fresh-eating jujube germplasms exhibited crisp texture, thin-peeled and juicy; drying-type germplasms exhibited denser texture, thick-peeled and low-juice; dual-purpose (fresh and dried) cultivars had moderately dense flesh, medium-thick peel and abundant juice. Finally, stepwise linear regression established a predictive model for sensory score: Y=7.16×10-16+0.26CSP+0.285HCE+0.207WSP+0.183ISP+0.229CE+ 0.132TPC+0.108SC+0.083SP, where Y represented the comprehensive sensory score. The model presented high precision with a determination coefficient of R2 = 0.98.【Conclusion】In conclusion, the model constructed from textural and physicochemical parameters achieved favorable evaluation performance on jujube fruit texture quality and eliminates the subjective bias inherent in conventional sensory evaluation.
